Will the quality change?
JPG is lossy, so the image is decoded and re-encoded and a little detail is dropped. At high quality this is invisible. Convert once from your original rather than repeatedly, because each pass compounds.
What happens to transparency?
JPG cannot store it. Any transparent area is filled with the colour you choose above, which defaults to white. If you need the transparency kept, convert to PNG or WebP instead.
